I like to be happy and healthy spend time outside Makes me feel so I garden. Part of the result is always plenty of zucchini during the summer months. Zucchini plants are such super producers that I often find myself with more veggies than I know. Over the years, I have come up with many recipes to take advantage of them. These delicious, crispy, air fryer zucchini fries are the latest.

I’ve been retesting a lot of my old frying recipes like mine Homemade Mozzarella Sticks, recently in the air fryer. I like to fry things occasionally, but doing it in the air fryer saves a lot of time.I have a large stainless steel This allows me to cook more at a time than the smaller ones.
If you don’t have an air fryer, you can definitely bake these in the oven. Just make sure to leave enough space between them. Also, I bake them in the last few minutes to make sure they are nice and crispy.
Make Zucchini Fries
To make the fries, you will first need to cut the zucchini into evenly sized sticks about 3-4 inches long. I am too lazy to peel the zucchini.
To bread the zucchini fries, I use the classic egg dip and flour coating technique. Simple to try and true, yes, messy. But that’s okay. We are washable.
Since we tend to avoid most grains, I usually use almond flour for bread crumbs in fried foods. example: these chicken fingers. For these zucchini fries, I combined the almond flour with Parmesan, garlic powder, Italian seasoning and salt.
Once the zucchini fries are breaded and ready, simply spray them with oil and place them in the air fryer for about 10 minutes. Depending on the size of your air fryer, you may need to work in batches. Resist the temptation to squeeze them all in at once or you won’t have a nice crispy crust.
That’s all there is to it! The crumbs are the most labor-intensive part of it all, but if you have kids running around, let them do it. They will have fun and will be especially excited to taste what they make.

Some of my kids are stubborn Big Dippers. I have a couple that don’t seem to need condiments at all, which makes the dippers think non-dippers are totally crazy. So, if you have spoons in your life, you might want to consider dipping these zucchini fries in sauce.
Air Fryer Zucchini Fries
Healthy zucchini fries are coated in almond flour and Parmesan cheese and cooked in the air fryer for a crispy and delicious crust.
Cut off the ends of the zucchini and discard.
Cut the zucchini into strips about 3-4 inches long and 1/2 inch thick.
In a shallow bowl, beat eggs and set aside.
In a shallow dish, combine almond flour, Parmesan cheese, Italian seasoning and salt.
First dip the zucchini strips in the beaten eggs and then in the almond flour mixture so they are breaded.
Place them in the air fryer basket/tray, leaving space between each.
Spray them with a little oil and air fry them at 400°F for 10 minutes or until crisp and browned.
Repeat steps 7 and 8 in batches as needed until all zucchini fries are cooked.
Serve immediately or with your favorite dipping sauce and enjoy!
If you want to bake these in the oven, just cook them at 425° for about 25 minutes, then bake for a few minutes to get them nice and crispy.
